The one pan this kitchen actually uses

A cast iron skillet, twenty years old, and why nothing else gets the same crust.

There are other pans in the cupboard. They come out for pasta water and not much else. The skillet does the fritters, the plantains, the sear on the chicken before it goes in the oven, and the cornbread on the rare occasions there is cornbread.

Season it once properly, never put it in the dishwasher, and dry it on the hob. That is the whole maintenance schedule.
